Easy Chicken & Zucchini (Quick Stovetop)

This is one of the simplest batches you can make: chicken + zucchini in one pot. Low prep, quick cook, and it stores well for the week.

Ingredients (β‰ˆ6 lb batch)

  • Protein:
    • 3 lbs boneless, skinless chicken thighs or breasts (chunked)
  • Vegetables:
    • 3 lbs zucchini (chopped)
  • Fats (optional):
    • 1–2 tbsp olive oil or coconut oil (optional)
  • Liquid:
    • 1–2 cups water or unsalted chicken broth (as needed)

Cooking Instructions – Stovetop (β‰ˆ30 min total)

  1. Start the chicken. In a large pot over medium heat, add chicken and 1 cup water/broth. Cover and simmer 10–12 minutes, stirring occasionally, until chicken is fully cooked.
  2. Add zucchini. Stir in chopped zucchini. Cover and cook 6–8 minutes until zucchini is soft.
  3. Reduce and mix. If it’s too watery, simmer uncovered for a few minutes. Stir well to combine.
  4. Optional oil. Add olive oil or coconut oil if using and stir in.
  5. Cool completely. Cool before portioning or serving.

Daily Feeding Guidelines

  • Small dogs: ½–¾ lb per day
  • Medium dogs: 1–1.5 lbs per day
  • Large dogs: 2–3 lbs per day

Adjust based on age, activity level, and overall body condition.

Storage

  • Refrigerate up to 3–4 days
  • Freeze portions for up to 3 months
  • Thaw in the refrigerator
