Easy Chicken & Zucchini (Quick Stovetop)
This is one of the simplest batches you can make: chicken + zucchini in one pot. Low prep, quick cook, and it stores well for the week.
Ingredients (β6 lb batch)
- Protein:
- 3 lbs boneless, skinless chicken thighs or breasts (chunked)
- Vegetables:
- 3 lbs zucchini (chopped)
- Fats (optional):
- 1β2 tbsp olive oil or coconut oil (optional)
- Liquid:
- 1β2 cups water or unsalted chicken broth (as needed)
Cooking Instructions β Stovetop (β30 min total)
- Start the chicken. In a large pot over medium heat, add chicken and 1 cup water/broth. Cover and simmer 10β12 minutes, stirring occasionally, until chicken is fully cooked.
- Add zucchini. Stir in chopped zucchini. Cover and cook 6β8 minutes until zucchini is soft.
- Reduce and mix. If itβs too watery, simmer uncovered for a few minutes. Stir well to combine.
- Optional oil. Add olive oil or coconut oil if using and stir in.
- Cool completely. Cool before portioning or serving.
Daily Feeding Guidelines
- Small dogs: Β½βΒΎ lb per day
- Medium dogs: 1β1.5 lbs per day
- Large dogs: 2β3 lbs per day
Adjust based on age, activity level, and overall body condition.
Storage
- Refrigerate up to 3β4 days
- Freeze portions for up to 3 months
- Thaw in the refrigerator
